Baby Mozzarella And Tomato Salad

A straightforward and simple summer salad. It’s a classic salad with lots of flavors. Fresh vegan mozzarella and juicy cherry tomatoes are the perfect combinations.

  • Vegan Mozzarella Cheese (120g)
  • Plum Tomatoes (180g)
  • Fresh Basil Leaf (6 leaves)
  • Aubergine Puree (100g)
  • Olive Oil (2 tablespoons)
  • Pinch of Pepper


  1. First, slice and dry vegan mozzarella cheese.

  2. Season it with black pepper. 

  3. Let's slice the tomato and season with black pepper.

  4. Smoke aubergine and puree season with, lemon and garlic. (Will take about 10 minutes)

  5. Arrange all items onto the plate with basil and olive oil and serve.
