- 1 cup Tomato Paste
- 2 tsp Ground Cumin
- Avocado for Serving, Peeled
- Vegetable Broth
- Frozen Corn 1 cup
- 3 Garlic Cloves, Peeled and Crushed
- Water, as much as you need
- Salt, with your Taste
Heat two tablespoons extra virgin olive oil, in a large nonstick pan. Add red pepper, garlic cloves, onions, and carrots. Keep stirring, until they got the brown colour. It won’t take more than 6 minutes.
Let’s mix the tomato paste and ground cumin. Stir for another 1 minute. Add 4 cup vegetable broth and the black beans. Stir for 2 minutes. Time to mix water and salt with your taste.
Soup will be ready after 20 minutes. But, if you have some extra time on your hand, let’s heat the recipe for another 20 minutes in low heat. Then you will get your soup surprisingly sticky and tasty.
Don’t make the soup too thick. If you think it’s too thick, add some water or vegetable broth.

- 2 fresh Bay Leaf
- Chopped Capsicum

- 4 cup Vegetable Broth

- 1 cup Rotini Pasta
So, take a large pot and put the vegetable broth. Let’s put vegetable broth on it, make sure the pan covered with vegetable broth.
Add the onion and garlic cloves, when they get soft add your vegetables. After adding zucchini, celery, carrots and green beans, stir at least 10 minutes with low heat.
Now time to add fresh basil leaves, oregano leaves, and bay leaves. Keep cooking, when your vegetables get tender mix 2 cup vegetable broth.
Add tomatoes, red peppers, salt and little bit water. Let’s cover the pot with heat resistant handle.

- Sliced Fresh Mushroom 3 Pounds (like Shitake or baby Portobello)
- Diced 1 Medium Size White Onion
- Minced 3 Garlic Cloves
- 4 Cup Vegetable Broth
- 2 Tablespoons White Flour
- 1 Tablespoon Coconut Oil
- Dairy Free Soy Milk 1 Cup
- Basil Leaves
- 2pcs Bay Leaf
- 2 Cups Dry White Wine

Let’s, add onions to the pot with mushrooms. Stir them until onions get brown. Add garlic cloves, thyme leaves, and white flour. Keep stirring, 2/3 minutes with low heat. Add white wine, stir 2 minutes.
Put dairy-free soy milk and cook 2/3 minutes. Let’s add vegan broth and mix with mushrooms. Add salt to your taste. Then add pepper, thyme leaves, and bay leaf, and make your soup much better.
