Beginner Recipe: 01
Chickpeas and Aubergine Penne
Chickpeas and Aubergine penne are super tasty. And it’s packed with lots of healthy ingredients. So, let's prepare everything we need Ingredients.
- 450 ml of Vegetable Stock
- 1 Large Size Onion Sliced
- 1 Table Cumin Seed Powder
- 350g Aubergine Cut in Diced Slice
- 1 Red Pepper (Chopped)
- 2 Tablespoon of Vegetable Oil/ Olive Oil
- 25g of Fresh Coriander
- 400g Canned Chickpeas
- 280g of Penne
- Salt and Pepper
- Saffron Threads
- Chopped Tomatoes
- 1 Cinnamon Stick
Set your frying pan over medium heat and toast the saffron for 20 seconds. sock it with a bit of vegan stock, set on the side.
Get a large saucepan and fry the onion with olive oil for 5 minutes. Add cumin powder, then stir all the other ingredients aubergine, tomatoes cinnamon stick, coriander leaves saffron liquid. Rest of the vegan stocks. Cover the saucepan for 20 minutes with medium heat.
Then add chickpeas to the saucepan salt and pepper and leave it for another 5 minutes.
In the meantime, get a large saucepan and boil your water with a bit of salt and ads pasta. Cook it for about 7-10 minutes.
Drain the pasta and put it in the serving bowl add the aubergine and chickpeas sauce to the pasta.
You can add some coriander for garnish.

Vegan Avocado Pasta
Rich and creamy Vegan avocado pasta bring lots of flavor to your mouth. Avocado pasta is also one of my favorite dish. In this dish, avocado works so correctly, and it creates a rich and creamy dish.
- Uncooked Spaghetti (250g)
- Garlic (1/2 Clove)
- Lemon Juice (2 Tablespoons)
- Basil Leaf (¼ Cup)
- Avocado (1 Medium Ripe)
- Olive Oil (1 Tablespoon)
- Salt and Pepper to Taste
Get a large pot to boil the water and boil your pasta for about 7-10 minutes.
Meantime get a food processor and process those ingredients together. Avocado, Lemon juice, Garlic and olive oil. And transform them until they are smooth. Add a little bit of water if necessary.
If your sauce is too thick, add some more olive oil and add salt and pepper to your taste.
Now drain the pasta and get a large pan and cook it for about 1-2 minutes.
Serve it with the fresh basil leaf and crushed pepper.
