- 4 Bell Peppers (Cut in Half) & Seedless
- Olive Oil (2 Tablespoons)
- Salt & Pepper (½ Teaspoons)
- Onion chopped (¾ Chopped)
- Minced Garlic (2 Cloves)
- Vegetables Broth (2 Cups)
- Quinoa (1 cup)
- Sweet Potato (2 Cups Peeled and Diced)
- Black Beans (420g) Drained
- Pinch of Cayenne Pepper
- Dairy Free Cheese (1 cup)
- Cilantro (½ cup)
- Cumin Powder (1 and ½ Teaspoons)
- Paprika (½ Teaspoons)
Make it ready for the preheat oven to 400F.
Get the bell pepper and drizzle with olive oil and sprinkle with salt.
In a baking dish bake bell pepper for 10 minutes. When ready set it on the side.
Now, get a medium size pot. In medium heat add olive oil into the pot and, sauté onion and garlic for 3-4 minutes.
Now add vegetable broth to the pot.
Next, add quinoa and sweet potato. Cover them with a lid. Reduce the heat to low. Bring the ingredients to boil. Let it cook it 15-20 minutes. By that time quinoa should be ready.
Once the quinoa and sweet potato are cooked. Next add black beans, cumin powder, salt and pepper, paprika and cayenne pepper.
Toss it & combine it.
Now, fill the bell pepper with cooked black bean quinoa. Add Vegan cheese on the top and put it back in the oven for 7-10 minutes.
Take them out from the oven serve it with fresh cilantro.

- Quinoa (180g) Rinsed and Drained
- Curry Powder (1 Teaspoons)
- 430ml of Water
- Pinch of Salt
- Green Curry Paste (4 Tablespoons)
- Tahini (2 Tablespoons)
- Lemon Juice (2 Tablespoons)
- Maple Syrup (1 Tablespoons)
- Water to Thin
- Red Bell Pepper (Diced)
- 3 Radishes (Thinly Sliced)
- Chopped Cilantro (1 cup)
- Pomegranate Seed (½ cup)
- Spring Onion (60g)
- Roasted Cashews (20g)
First get a saucepan add quinoa to the pan. Toast it over medium heat for 2-3 minutes. Be careful not to burn the quinoa.
Next, add curry powder and water to the pan. And cook it for 20 minutes. Set the cooked quinoa on the side and let it cool for minimum 10 minutes.
In the meantime, let's prepare the dressing. Get a mixing bowl add all the dressing ingredients whisk it until a pourable dressing achieved. Add little water if you think the dressing is too thick.
Taste for the flavour if necessary ad little extra of anything with your taste.
Now your quinoa should be cold enough. Add all the ingredients like radishes, bell pepper, cashews, pomegranate seed and spring onion.

- Red Onion (½ Cup)
- Cooked Black Beans (1 Cup)
- 2 Ripe Avocado (Diced)
- Chopped Tomato (1 Cup)
- Can of Cooked Corn (1 Cup)
- Sliced Red Chili (1-2 Tablespoons)
- Lime juice (From 2 limes)
- Cilantro (½ Cup)
Get a saucepan over medium heat add vegetable stock to the pan add quinoa. And cover it with a lid. Lower the heat and let's cook it for 15 minutes or until done. And set it on the side.
